In general, any amp can be tailored to what you like/need.
Common mods:

FX Loop

Increase/Decrease Gain

Tone Shaping
You can add adjustable tone parameters like middle eq to Fenders, but all equipment has an audio signal path made up of many parts that are not "user adjustable" that make up the way it sounds. And they can be adjusted.

The "Take out the Bad Stuff, Put in the Good Stuff"
New amps "at least the major brands" are largely made of new cheap components. Part of why we love the sound of old equipment so much is literally, cause they don't make em like they used to. Since the 80s electronics components have been made cheaper and smaller and cheaper and smaller. They didn't really have options for shitty parts, even if they wanted them, in the 60s and 70s (audio gear golden age). Any way I can put nicer parts in your equipment.

Hi/Low Power Switch

Same power amp distortion at lower volume. Makes your power amp work less hard, giving you the same effect as an attenuator but it's saving tube life not diminishing it!
